Instructions
  1. Preheat oven to 400 degrees and line a large pan with parchment paper.
  2. In a bowl, mix together the beef, egg, parmesan cheese, garlic, coconut oil and black pepper.
  3. Divide meat into 8 sections and form into balls.
  4. Press into the middle of each meatball with your thumb and create a small crater.
  5. Add in a piece of the mozzarella cheese and fold the rest of the meatball over. Repeat for all meat balls.
  6. Add meat balls to the pan and bake for 20-30 minutes
  7. Remove from oven and sprinkle on more parmesan cheese.

    They were kinda ho-hum. They seem to be a good base but need it to be kicked up a few knotches.
    The picture looks like maybe it’s turkey? or breaded somehow? The stuff that came out of my oven looks NOTHING like that.
    The description mentions “eggs” the ingredient list doesn’t include egg so I guessed and used 1 egg per pound of hamburger.
    The ingredients mention “coconut oil” but never says what to use it for (and then the meatballs are baked.. so it’s completely not obvious why that’s listed.
    Mozarella is B O R I N G. Next time I’ll used something more exciting like gorgonzola or gouda. Even pepper jack would have been more interesting.
    The meat needs more umph. Umph could be added with spices (cumin, coriander etc like my Moroccan meatball recipe https://www.bigoven.com/recipe/moroccan-meatballs/235302 Though I’m puzzled what cheese to pair with Moroccan spices) or with sauces (soy sauce and worchestershire sauce like my stuffed meatloaf https://www.bigoven.com/…/hickory-smoked-bacon-wrap…/1957114)
    These were filling.. but had a lot of potential they didn’t deliver.
    Overall: 4/10
    But with tweaks I’ll make it again.
