Ingredients

cooked chicken breast, trimmed of fat

block cheddar or mozzarella cheese
1/4
cup
sun-dried tomatoes
1/2
lb
thinly sliced pepperoni
1
bunch
fresh basil
Marinara sauce for dipping (optional)
Instructions
Preheat oven to 450 degrees while you prep.
Chop chicken into bite sized pieces.
Take cheese and cut ¼ inch slices and then cut into matchstick slices.
Cut sundried tomato into thin strips.
Place pepperonis on a plate to begin building your “pizzas”.
Place your sundried tomato, and then a piece of chicken into the center of each pepperoni.
Take a piece of cheese and tuck it on one side of the chicken and a small piece of basil on the other.
Roll up your chicken in pepperoni and poke your skewer through starting with the loosest part of the pepperoni.
Continue building skewers and place on baking sheet. (Note that 3 or 4 per skewer is a good number, you don’t want them too tight.)
Place in oven and bake for 7-8 minutes. When finished drain the oil from the skewers.
Serve hot and enjoy with marinara sauce.
