Cheesy Meatballs
These herb and cheese stuffed meatballs make for a great snack or as an addition to your low carb pasta dishes. Feel free to spice to your personal taste, the spices and portions listed here will produce a light herb taste to your meatballs.

  1. Preheat oven to 400 degrees and line a large pan with parchment paper.
  2. In a bowl, mix together the beef, egg, parmesan cheese, garlic, coconut oil and black pepper.
  3. Divide meat into 8 sections and form into balls.
  4. Press into the middle of each meatball with your thumb and create a small crater.
  5. Add in a piece of the mozzarella cheese and fold the rest of the meatball over. Repeat for all meat balls.
  6. Add meat balls to the pan and bake for 20-30 minutes
  7. Remove from oven and sprinkle on more parmesan cheese.
