Bacon Egg Cupcakes

Ingredients
  

  • 8 eggs
  • 6 slices bacon, chopped
  • 1/2 cup grated parmesan cheese
  • 1/4 cup chopped chives
  • 1 tomato, thinly slices
  • 1 avocado, peeled, pitted and sliced

Method
 

  1. In a large skillet, fry the bacon until crispy.
  2. Remove the bacon and drain the grease, reserving some of the bacon grease.
  3. Spray a muffin pan with cooking spray. Place the bacon on the sides of each muffin, to act as the “cup”.
  4. In a bowl, mix together the eggs, reserved bacon grease, parmesan cheese, and chives.
  5. Pour the mixture into the muffin “cups”.
  6. Bake in an oven preheated to 350 degrees for about 12-13 minutes, until eggs are firm.
  7. Remove the cupcakes from the muffin pan with a rubber spatula and place a slice of tomato and avocado on each one.
