Although green beans can be a boring vegetable sometimes, this low-carb keto recipe livens up the staple and adds some extra fibre to your diet.

I love this recipe because it’s a delicious way to sneak greens and veggies into your diet whether it’s yourself or your kids you have to trick. The beans are meant to be crisp yet tender while smothered in the buttery almond and lemon sauce. If almonds aren’t your thing, try replacing them with crushed pistachios or hazelnuts.

Another reason why this recipe is so great is that you can minimize prep time. If you’re strapped for time and trying to get a meal together quickly, the green beans can also be done in the microwave, leaving you a few minutes to spare.

A Simple Tip: Cut the ends of the beans at an angle to make them look more pleasing. This recipe can be done with the addition of minced shallots or garlic to add an extra punch of flavour.

Buttery Green Beans with Almonds

Ingredients

Instructions

  1. Wash and trim the green beans.
  2. Prepare the lemon for squeezing and mince the garlic or shallots if you are using them.
  3. Microwave: In a microwave safe dish, place the prepared beans in 2 tbsp of water and heat for 2-3 minutes. Drain, stir and leave uncovered to allow steam to escape.
  4. Stove Top: Bring a pot of water to a boil, have a large bowl of ice water to the side as well. Add the green beans to the boiling water until tender and bright green. Drain the beans in a strainer and then place into the ice water.
  5. Have a large pan over medium heat - add the butter and almonds (also add optional items of garlic or shallot). Cook until almonds begin to brown.
  6. Add the green beans and coat in butter. Cook until warm all the way through. Squeeze lemon juice all over.
  7. Add salt and pepper to taste.
