Chicken a Roni Skewers
Ingredients
Instructions
- Preheat oven to 450 degrees while you prep.
- Chop chicken into bite sized pieces.
- Take cheese and cut ¼ inch slices and then cut into matchstick slices.
- Cut sundried tomato into thin strips.
- Place pepperonis on a plate to begin building your “pizzas”.
- Place your sundried tomato, and then a piece of chicken into the center of each pepperoni.
- Take a piece of cheese and tuck it on one side of the chicken and a small piece of basil on the other.
- Roll up your chicken in pepperoni and poke your skewer through starting with the loosest part of the pepperoni.
- Continue building skewers and place on baking sheet. (Note that 3 or 4 per skewer is a good number, you don’t want them too tight.)
- Place in oven and bake for 7-8 minutes. When finished drain the oil from the skewers.
- Serve hot and enjoy with marinara sauce.
