The best part of a pizza is when it’s fresh out the oven and oh so ooey gooey, with melted cheese and that perfectly crisped pepperoni ready to savor.

This brings us to the creation of the bite-sized Chicken a Roni Skewers that are packed with the delicious pizza flavour with significantly less impact on your weight loss goals.

This is not a light food by any means, as it’s high in proteins and satisfying fats, however it rates low on the glycemic index which can help many of you keep your cravings and meal plans in check.

These bite-sized pieces are easy to savor, served on a skewer and ready to explode with cheesy pizza flavor with each bite.

Instructions
  1. Preheat oven to 450 degrees while you prep.
  2. Chop chicken into bite sized pieces.
  3. Take cheese and cut ¼ inch slices and then cut into matchstick slices.
  4. Cut sundried tomato into thin strips.
  5. Place pepperonis on a plate to begin building your “pizzas”.
  6. Place your sundried tomato, and then a piece of chicken into the center of each pepperoni.
  7. Take a piece of cheese and tuck it on one side of the chicken and a small piece of basil on the other.
  8. Roll up your chicken in pepperoni and poke your skewer through starting with the loosest part of the pepperoni.
  9. Continue building skewers and place on baking sheet. (Note that 3 or 4 per skewer is a good number, you don’t want them too tight.)
  10. Place in oven and bake for 7-8 minutes. When finished drain the oil from the skewers.
  11. Serve hot and enjoy with marinara sauce.
