Bread-less Cucumber Sandwiches

Fresh and easy, these bread-less cucumber sandwiches make the perfect appetizer or light snack. These bread-less sandwiches are fantastic for a light lunch and quiet refreshing.

You don’t need bread to make a great sandwich. Use this recipe all the time, without getting sick of eating the same food again and again by switching up the filling.

This recipe is perfect in hot weather thanks to the refreshing flavour of the cucumber. The kids love to snack on this dish when we bring them to our family picnics!

It’s one the easiest recipes we have and we love the versatility of this dish. Because this is a low mess recipe which means less clean up for the kids, but most importantly, you, we had to share it!

This dish is easy to make ahead of time and store for later. Simply prepare the dish and store in the fridge for later!

Instructions
  1. Start by splitting the cucumbers in half and scraping out the seeds. You can use a spoon or melon baller to get them out.
  2. In a small bowl, mix together the soft cream cheese and chives.
  3. Spread the cheese mixture on each half and put some of the thinly slices meat on top of one half. Cover with the other cucumber half. Cut in half across the cucumber for the sandwiches.
