Shrimp is a favorite among our family. We love to make this recipe on a hot summer day because of the fresh flavors of the lime and cilantro. It’s a super easy recipe and is a mess-free finger food appetizer.
This recipe holds the perfect combination of spicy and sweet. We love to enjoy this recipe on its own, and/or in a salad. If you’re looking to add some flavor and protein to your salad, toss a few of these bad boys in.
You can also throw them on the BBQ after baking if you’re a fan of grilled shrimp. We highly recommend it.

- 30-35 jumbo shrimp, shell off and deveined
- 3/4 cup fresh cilantro, chopped
- 2 tbsp red wine vinegar
- 2 tbsp olive oil
- 1 tbsp lime juice
- 2 garlic cloves, minced
- 1/4 tsp red pepper flakes
- 1/2 tsp Paprika
- Salt and pepper, to taste
- zest of one lime

- Preheat oven to 400F
- In a large bowl, mix together cilantro, red wine vinegar, olive oil, lime juice, minced garlic, red pepper flakes, paprika, lime zest. Add salt and pepper to taste.
- Add shrimp that has been patted dry to mixture. Toss to coat everything.
- Spread seasoned shrimp out on a baking sheet, making sure they are in a single layer.
- Bake for 8-10 minutes, until pink.
- Garnish with fresh cilantro and lime zest. Serve immediately
