Low Carb Cilantro Lime Shrimp

Hey, seafood lovers, this baked cilantro lime shrimp is so easy to make and packed with flavors. This recipe is also great for parties. Before baking them, slide a few shrimps onto a skewer and this will definitely be a crowd pleaser.

Shrimp is a favorite among our family. We love to make this recipe on a hot summer day because of the fresh flavors of the lime and cilantro. It’s a super easy recipe and is a mess-free finger food appetizer.

This recipe holds the perfect combination of spicy and sweet. We love to enjoy this recipe on its own, and/or in a salad. If you’re looking to add some flavor and protein to your salad, toss a few of these bad boys in.

You can also throw them on the BBQ after baking if you’re a fan of grilled shrimp. We highly recommend it.

Instructions
  1. Preheat oven to 400F
  2. In a large bowl, mix together cilantro, red wine vinegar, olive oil, lime juice, minced garlic, red pepper flakes, paprika, lime zest. Add salt and pepper to taste.
  3. Add shrimp that has been patted dry to mixture. Toss to coat everything.
  4. Spread seasoned shrimp out on a baking sheet, making sure they are in a single layer.
  5. Bake for 8-10 minutes, until pink.
  6. Garnish with fresh cilantro and lime zest. Serve immediately
