This rich and creamy salad is a great side dish and pairs well with any meat dish of your choice.
By cutting out the macaroni and substituting it for cauliflower, you’re cutting out the carbs without compromising taste! This dish is also easy to enjoy on the go, just store it in the fridge and it’s ready to go when you are! Just throw this dish into your meal prep rotation and you are good to go.

- 1 cup raw cailiflower broken into very small pieces
- 1-1/2 tsp mayonnaise sugar-free
- 1/2 tsp cider vinegar optional
- 1 pinch salt
- 1 pinch pepper
- 1/3 tsp stevia
- 1 tsp dijon mustard
- 2 tbs celery thinly sliced
- 1 tbs bell pepper chopped
- 2 tsp onion chopped
- 1 tsp carrot grated
- 2 tbsp salad olives

- Steam cauliflower until tender, but not mushy
- Combine mayo, mustard, vinegar, salt, pepper and sweetener. Mix well (taste to adjust seasoning)
- Put cauliflower, celery, carrot, onion, pepper and olives into a bowl. Pour mayo mixture over and combine gently.
- Chill overnight, or longer (the longer it sits, the more flavourful the dish will be)
- Before serving, add more dressing to preference.
