If you don’t like beef, that’s okay! You can use whatever cut of lean meat you like such as chicken or even go vegetarian! Just be sure to double the amount of vegetables so you get enough protein.

Ingredients
  

  • 1 lb beef tenderloin roast cubbed
  • 1 green onion, sliced
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 tbsp coconut oil
  • 2 garlic cloves, minced
  • 1 lb fresh asparagus
  • 1/2 lb mushroom, sliced
  • 1/4 cup butter
  • 1 tbsp soy sauce
  • 1 tsp lemon juice

Method
 

  1. In a wok or large skillet, stir-fry the beef, onion, salt and pepper in oil for 3-5 minutes.
  2. Add garlic; cook 1 minute longer.Remove and keep warm.
  3. In the same pan, stir-fry asparagus and mushrooms in butter until asparagus is tender.
  4. Return beef mixture to the pan.
  5. Stir in soy sauce and lemon juice; heat through.
