Creamy Spinach Artichoke Chicken Thighs
Ingredients
- 1 tsp olive oil
- 6 skinless bone-in chicken thighs or chicken breast
- 4 cloves garlic, minced
- 1 cup full fat cream cheese
- 1 cup chicken stock or broth
- 1 can (14oz) artichoke hearts, drained and chopped
- 4 cups baby spinach leaves
- Salt and pepper, to taste
- 1/4 cup Parmesan cheese
Instructions
- Preheat oven to 400°F.
- In a large skillet, add olive oil over medium-high heat.
- Add garlic and chicken, flesh-side down, and sear for 2 - 3 minutes on each side or until golden brown.
- Add in cream cheese and occasionally stir it until it begins to melt down and become thinner in consistency.
- Pour in the chicken broth and add the parmesan cheese.
- Bring to the boil, reduce heat to low.
- Add artichokes and spinach; simmer for 10 minutees.
- Place the skillet into preheated oven and continue to roast for 15-20 minutes. Serve with steam vegetables!
