Who needs those extra tortilla chip carbs when you can have the same full flavour nachos but low carb high fat. These mini pepper nachos are the perfect alternative to traditional nachos, except low-carb, tastier, and way healthier! A simple recipe, that you can whip up anytime you need a snack 🙂

Instructions
  1. Preheat oven to 350C.
  2. In a medium bowl, combine chili powder, ground cumin, paprika, salt, pepper, garlic and mix evenly.
  3. In a medium pan, add olive oil, ground beef, and spice mixture over medium heat. Break ground meat into small chunks while cooking. Cook throughly for 10 minutes or until brown.
  4. Remove from heat and let it side on the side.
  5. On a baking tray, line with parchment paper and arrange peppers side by side with cut side up.
  6. Sprinkle ground beef over peppers and shredded cheese.
  7. Bake for 8 minutes or until cheese has melted.
  8. Remove from oven and sprinkle tomatoes, jalapeno, and avocado on top. Serve with sour cream!
