Vegetable and Beef Stir Fry

Still deciding what to make for dinner tonight? What about a Vegetable and Beef Stir Fry? Stir-fry dishes are great if you have kids who are picky about their vegetables. This recipe covers the vegetables and beef with a tasty savory sauce, so they won’t even notice the vegetables!

This delicious, filling, and keto-friendly dish will have the whole family clamoring for more. With a hint of Asian infusion, you can enjoy this dish as a main or as a side dish.

If you don’t like beef, that’s okay! You can use whatever cut of lean meat you like such as chicken or even go vegetarian! Just be sure to double the amount of vegetables so you get enough protein.

For a spicy twist, stir in your favorite Asian hot sauce just before serving.

Stir Fried Beef

Instructions

  1. In a wok or large skillet, stir-fry the beef, onion, salt and pepper in oil for 3-5 minutes.
  2. Add garlic; cook 1 minute longer.Remove and keep warm.
  3. In the same pan, stir-fry asparagus and mushrooms in butter until asparagus is tender.
  4. Return beef mixture to the pan.
  5. Stir in soy sauce and lemon juice; heat through.
