Instructions
Low Carb English Muffin
  1. Mix all of the ingredients, separate the dough into 2 portions, and shape into muffins.
  2. Slice each of the muffins in half and toast.
Hollandaise Sauce
  1. Add egg yolks into a blender and blend well.
  2. Slowly stir in the hot melted butter until the sauce is smooth.
  3. Add in the lemon juice and cayenne pepper/hot sauce until all are well blended.
Assembly
  1. Place the toasted muffin on a plate.
  2. Add the bacon weave and slice of cheese.
  3. Place the poached egg on top and add your still hot hollandaise.
  4. Finish with some fresh green onion on top.
