You’re probably thinking, some of the popular breakfast items such as pancakes and waffles contain flour.
To make it keto, we can easily substitute the flour with coconut flour. Coconut flour contains higher fats and way less carbs compared to regular baking flour. This makes coconut flour the perfect (and delicious) substitute for baking.
Light and fluffy, these coconut flour pancakes pair perfectly with bacon and eggs or are just as good on their own. You can whip up a batch in under 30 minutes and store some in the freezer for later.
Top them off with some keto syrup and coconut whipped cream and enjoy!
Fluffy Low Carb Coconut Pancakes
Ingredients
- 1/4 cup butter, melted
- 1/4 cup heavy cream
- 1 tsp stevia
- 1/2 tsp salt
- 4 large eggs
- 1/2 tsp vanilla
- 1/4 cup coconut flour
- 1/2 tsp baking powder
Instructions
- In a large bowl mix, butter, cream, stevia, salt, eggs and vanilla.
- In another bowl, combine coconut flour and baking powder.
- Combine the wet ingredients with the dry.
- Lightly oil skillet and heat over medium heat.
- Add large tablespoons of batter to the skillet and cook until golden.
