Keto-Friendly Macaroni Salad

Ok so we know that technically this recipe isn’t macaroni, which is why we call it the “I can’t believe it’s not macaroni”  This recipe makes the perfect dish to take to any event, especially on a warm summer day. This rich and creamy salad is a great side dish and pairs well with any meat dish of your choice.

By cutting out the macaroni and substituting it for cauliflower, you’re cutting out the carbs without compromising taste! This dish is also easy to enjoy on the go, just store it in the fridge and it’s ready to go when you are! Just throw this dish into your meal prep rotation and you are good to go.

Keto-Friendly "Macaroni" Salad

Ingredients

Instructions

  1. Steam cauliflower until tender, but not mushy
  2. Combine mayo, mustard, vinegar, salt, pepper and sweetener. Mix well (taste to adjust seasoning)
  3. Put cauliflower, celery, carrot, onion, pepper and olives into a bowl. Pour mayo mixture over and combine gently.
  4. Chill overnight, or longer (the longer it sits, the more flavourful the dish will be)
  5. Before serving, add more dressing to preference.
